okay so. you keep seeing fresh milled flour pop up everywhere and you're curious about what makes it special.
i promise it's simpler and lovelier than it sounds. this page is the friendly version: what's actually inside a grain of wheat, what happens to it on the way to a bag of flour, and why the people who mill their own love it so much.
there are a couple of things to click and a little true or false quiz further down, because reading about grain anatomy should not feel like homework. have a poke around.
before we go any further
i'm a home baker who loves grain. i'm not a doctor, i'm not a dietitian, and nothing on this page is medical or nutritional advice. it's general information about how grains are built and how milling works, nothing more. if you have celiac disease, a gluten sensitivity, diabetes, or anything at all going on that affects how you eat, please talk to your doctor or a registered dietitian before you change anything. they know you and your history. i genuinely don't, and i'd never want to guess on your behalf.
what's actually inside a wheat berry
a wheat berry is just a whole grain of wheat, seed and all. it has three parts, and which of them end up in your bag is what makes one flour different from another. tap one and i'll tell you what it does.
the bran
the tough multi layered jacket on the outside. this is where nearly all the fibre lives, the insoluble kind that keeps everything moving along nicely, plus b vitamins, trace minerals and a good dose of antioxidants. it's also what gives whole wheat bread its speckles and its deeper, nuttier flavour. white flour has essentially none of it left.
the germ
the tiny embryo tucked in at the base, the part that would actually sprout into a new wheat plant if you planted it. it's the smallest piece by far and easily the most nutrient dense: healthy unsaturated fats, vitamin e, b vitamins, protein and antioxidants. those lovely fats are also exactly why commercial flour removes it, because oil goes rancid and mills need their flour to sit on a shelf for months. when you mill at home, you simply don't have that problem.
the endosperm
the big starchy middle, and the food supply the seedling would have lived on. it's mostly carbohydrate and protein with small amounts of vitamins and minerals, and it's the part that makes flour behave like flour. this, all on its own, is white flour. there's nothing wrong with it at all, it's just missing two of its three chapters.
what gets left behind when flour is refined
here's the bit that made it click for me. when wheat is refined into white flour, the bran and the germ are stripped away and only the endosperm goes in the bag. that's about 17% of the grain removed by weight, but it happens to be the 17% carrying most of the fibre, most of the minerals and all of the healthy fats.
refining also takes out roughly a quarter of the grain's protein, and reduces a long list of nutrients along the way. enrichment adds a handful of them back, which is a genuinely good public health thing and i'm not going to pretend otherwise. it just doesn't add back everything, and it can't add back the fibre or the fats at all.
when you mill at home you skip that whole conversation. the bran, the germ and the endosperm all go into the bowl together, because there was never a step where they got separated.

so the short version. fibre, magnesium, potassium, phosphorus, zinc, vitamin e and selenium all take a real hit when the bran and germ come off, and fibre is the dramatic one at nearly four times the amount. the b vitamins and iron get topped back up by enrichment, sometimes past where they started.
what enrichment can't put back is the fibre or the healthy fats from the germ, because you can't sprinkle those into a bag of flour. that's the gap fresh milling closes, and it's really the whole argument in one sentence.
which grains can you actually mill at home
more than you'd think, and this is the part where it stops feeling like a health project and starts being genuinely fun. the rule of thumb is dry and not oily. wheat, ancient grains, rice, beans and pulses are all fair game. oily seeds like flax and sesame are not, they'll gum up the works, so check your mill's manual before you get adventurous.
hard red wheat
the classic bread grain. strong gluten, deep nutty flavour, and what most whole wheat loaves are built on.
hard white wheat
same strength, milder and a little sweeter. lovely if your family finds red wheat too assertive.
soft white wheat
lower protein, so this is your cookie, cake, muffin and pastry flour. it makes such a difference.
spelt
an ancient wheat with a gentle, softer gluten and a warm nutty taste. beautiful in rolls.
einkorn
the oldest wheat there is. golden, delicate, asks for a slightly gentler hand, and completely worth trying.
kamut, or khorasan
buttery and rich with a slight sweetness. gorgeous in pasta and flatbreads.
rye
for depth and that proper old world sourdough tang. a little goes a long way.
oat groats
fresh oat flour for cookies and muffins, and it smells incredible while you mill it.
rice
the gluten free workhorse. fresh milled rice flour is far less gritty than the bagged kind.
buckwheat
not wheat at all, despite the name. earthy, gluten free, and made for pancakes.
corn
cornmeal for cornbread, polenta and dusting the peel under a pizza.
beans and lentils
chickpeas, black beans, red lentils. wonderful for gluten free baking and for thickening soups.
what the research generally says about whole grains
i want to be careful and clear here, because i'd much rather be genuinely useful to you than sound impressive.
broadly, large population studies have found that people who eat more whole grains tend to have lower rates of heart disease, type 2 diabetes and certain cancers, and dietary guidelines around the world reflect that by encouraging whole grains over refined ones. fibre also plays a well understood role in digestion and in helping meals feel satisfying for longer.
but those are patterns across large groups of people, not promises about any one person, and people who eat more whole grains often differ in lots of other ways too. so please read it as a gentle nudge in a direction, not as a prescription. and none of this is unique to milling at home. store bought whole wheat flour is still whole grain. milling fresh mostly changes flavour, freshness and how the flour behaves in your hands.

fresh milled flour drinks up more water than the flour from a bag.
the answer is true
and this is the number one reason a first loaf goes sideways. the bran and germ are thirsty, and they keep absorbing water for a while after mixing. if your dough feels stiffer than you expected, it probably is. add a little more water than the recipe calls for, or let it rest for twenty minutes before you judge it. everything on this site is already written with that in mind.
you have to sift the bran out to get a soft, fluffy loaf.
the answer is false
you really don't. sifting is an option and some bakers love it, but soft whole grain bread is mostly about hydration, a decent rest, and not rushing the rise. i almost never sift and the loaves are lovely.
white flour has no nutrition left in it at all.
the answer is false
this one comes up a lot, and the full picture is kinder than you'd think. enriched white flour has iron and several b vitamins added back, and in the case of folate it ends up with considerably more than whole wheat does. what it can't get back is the fibre, the magnesium and the healthy fats from the germ. so it isn't empty, it's incomplete.
fresh milled flour doesn't keep as long as store bought.
the answer is true
and it's the germ's fault, in the nicest possible way. those healthy oils start to oxidise once the grain is broken open, which is exactly why commercial mills remove them in the first place. mill what you need and use it within a few days, or pop the extra in the freezer. whole berries, on the other hand, will happily sit in your pantry for years.
how to actually start, without overthinking it
honestly? buy a small bag of wheat berries, mill enough for one loaf, and make one loaf. that's the entire onboarding process. you don't need to know a thing about extraction rates or ash content to make something delicious.
start with hard white wheat if you want the gentlest landing, because it's mild and forgiving and nobody at your table will find it too earthy. keep your berries somewhere cool and dry and they'll last for years. mill only what you're about to use, and freeze anything left over.
and give yourself a couple of loaves before you decide how it's going. fresh milled dough behaves a little differently from what you're used to, and you pick it up quickly. mine took three loaves. the third one was the one that made me a person who talks about wheat at parties.
