i’m not a professional, just a hobby baker with a grain mill and a slight obsession with fresh milled flour. i started milling my own flour because i actually care about what goes into my body, and once i learned what happens to most store bought flour… i couldn’t unlearn it.

most grocery store flour is roller milled and stripped of the bran and germ, which removes a big portion of the fiber, vitamins, minerals, and healthy fats. what’s left is basically shelf stable starch. it’s convenient, yes. but it’s also kind of… dead flour. long shelf life usually means the most nutrient dense parts of the grain are gone.

when you use fresh milled whole grains, you’re keeping the entire wheat berry intact. that means natural fiber, b vitamins, iron, magnesium, and the oils that give bread real flavor and better texture. whole grains are linked to better digestion, steadier blood sugar, and overall heart health. it’s not a magic cure for anything, but it is a more complete food.
