peanut butter chocolate chunk cookies | fresh milled flour

ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1/2 cup (100 g) light brown sugar
- 2 large egg yolks, room temp
- 2 tsp vanilla extract
- 1/2 cup (45–50 g) peanut butter powder
- 2 1/2 cups (≈250 g) fresh milled soft white wheat flour, fine grind
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup chopped semi-sweet chocolate
- optional: flaky sea salt for topping
instructions
- preheat oven to 350 f (177 c). line baking sheets with parchment paper.
- in a medium bowl whisk together the fresh milled flour, peanut butter powder, baking soda, baking powder, and salt. set aside.
- in a large bowl or stand mixer cream the butter, granulated sugar, and brown sugar until light and fluffy, about 3 min.
- mix in the egg yolks and vanilla.
- gradually add the dry ingredients to the wet, mixing just until combined.
- fold in the chopped semi-sweet chocolate.
- cover and rest the dough 20–30 min so the fresh milled flour can hydrate. if the dough seems dry after resting, add 1–2 tsp milk. if it feels too soft, chill it 20 min.
- scoop dough into 1 1/2 tbsp portions and space 2 inches apart on the baking sheets.
- bake 9–11 min, until the edges are set but the centers still look slightly underdone.
- cool a few minutes on the pan, then transfer to a wire rack. top with flaky salt if you want.
fresh milled flour tips
- resting the dough lets the fresh milled flour and the peanut butter powder absorb moisture. this is what keeps these soft instead of dry and crumbly.
- peanut butter powder is thirsty. if the dough still feels dry after resting, add milk 1 tsp at a time until it comes together.
- mill your soft white wheat on a fine setting. a coarser grind bakes up drier and grittier in a dough this low in liquid.
- don't over bake. whole grain cookies brown faster and keep setting on the pan as they cool.
- add the flaky salt right out of the oven while the tops are still warm so it sticks.
- super good with milk!
